Modelling Paste Recipe

This is especially for Mazeda. Good luck with it and maybe send me a picture of your butterflies.x

You will find gelatine, cornflour and cream of tartar in the baking isle of your supermarket.


Modelling Paste - Divine Cupcakes by Tamara Jane

500g Icing Sugar
130g Cornflour
110ml water
11/2 tablespoons gelatine
1 teaspoon cream of tartar

Sift the icing sugar and cornflour into a large mixing bowl to combine.

Place water, gelatine and cream of tartar in a glass measuring jug and leave to stand for 5 minutes.  Place the jug in the microwave and heat on low in 10 second bursts until the gelatine has dissolved.  Be careful not to overheat the mixture. 
If you do not have a microwave, place the water, gelatine and cream of tartar in a bowl and leave to stand for 5 minutes and then heat gently over a pan of simmering water until the gelatine dissolves.

Pour the gelatine mixture into the icing sugar and cornflour mixture and mix thoroughly until well combined.  Allow to rest in the bowl, covered with a damp tea towel for an hour.  Place the paste into an airtight container and store in the fridge until required.

This paste is best left overnight before making decorations. 

This recipe is great for making icing butterflies and three-dimensional decorations.

hiya im going to make my little girl a first birthday cake and will use your recipie for the modeling paste but when is best to put the colour in to the mixture ? cheers rosie.

Sorry for the late reply, I've been MIA on the blogging front lately.

I would make the paste and colour it afterwards as this will allow you to make more than one colour if required. Hope this helps! x

Hi Astral!

How long will this keep for in the fridge? I made a batch with (ugh!!)yellow cornflower and I need to tint it pink! So now I am starting over with white. I have more than enough paste to last me for a long long time...

Hi Anon,

I sounds like you may have used what I know as corn meal. If this is the case what you need to use is cornstarch, known in the UK as corn flour and the 1st batch will not be usable.

The modelling paste will keep for ages, as long as you store it airtight. x

Just wondering can you use agar instead of gelatine?

I can't say for sure if agar would work as a substitute as I have never tried but I'd go for it if I was you. Definitely worth a try.

Hi, can I use leaf gelatine instead of the granules. I live in France and the leaf gelatine is widely available but the granules are not.

You probably can but I can't advise on quantities etc. It is worth giving a go.
