I love waffles and I love my waffle maker even more!

Baby Love bought me my waffle machine last Christmas and it is brilliant. It is impossible not to make perfect waffles with this, it has loads of different settings which I love because I love a crispy waffle as well as a soft one. I have also made great potato waffles in it.
I use this recipe all the time and love adding to and embellishing it.
Bake by Rachel Allen is a brilliant cookbook, this recipe is from the Breakfast and Patisserie chapter. Possibly one of the best parts of the book with recipes for English Muffins, Bagels, Brioche, Croissants, Crumpets and Eclairs.
Waffles - Rachel Allen Bake
400g (14oz) plain flour
2 tsp baking powder
2 tsp salt
100g (3 1/2 oz) caster sugar
200g (7oz) butter, melted and cooled
600ml (1 pint) milk
Icing sugar for dusting
Sift the flour, baking powder and salt into a large bowl.
Add the sugar and mix well.
Whisk the eggs in another bowl, then mix in the melted butter and milk. Pour the wet ingredients into the centre of the dry ingredients, whisking all the time until you have a smooth batter.
Heat the waffle machine. Using a ladle, pour some batter into the machine. Do not fill it up too much. Close the lid and cook for about 4-5 minutes or until waffles are golden brown and cooked through.
Remove waffles and add your own choice of topping.
